Wilson Creek Almond Champagne | wines at the red table

A few weeks ago I Instagrammed my latest obsession: Wilson Creek Almond Champagne. This champagne is so delicious, I knew I had to put it on the blog. I recently decided to cut back quite a bit on blogging to focus on some other things (and sometimes nothing at all…), and I would only post something if I really, really loved it or had made it (or drank it) several times that it became a standby. This champagne falls into both categories.

As does this Beefy Nacho Soup. It’s so good – I’ve made it three times in about a month. Twice I used chicken, and I have to say, this version closely resembles my favorite Chicken Diablo Soup from Tommy Colina’s here in Omaha. I really should snap a few photos and post it here, but I’m too busy drinking Almond Champagne.

Jones Brothers Cupcakes | red table reviews

Oh, well, hello again! It's been a while, I know, and for that, I apologize. I need a little break from blogging for a variety of reasons. The biggest reason is that I was feeling sorely uninspired. Or maybe overinspired? The thing is, there are four bajillion food blogs out there on the Interwebs, and they all seem to have the same sorts of things floating around on them. It's hard to do something different -- be original. In fact, it's darn near impossible when it comes to recipes. You don't need another salad, soup or chicken recipe. I don't need to tell you how to make a smoothie (in case I do: put yogurt, milk and fruit you like to eat in a blender and...blend.). I feel like a lot of stuff out there are riffs on riffs on riffs, and I am not sure I want to add to the cacophony. You know?

Plus, I put a lot of pressure on myself to have something new twice a week, and well, to be honest, we don't always eat new things twice a week. And that's okay! You don't have to eat new things twice a week either. I've found cooking and eating a lot more enjoyable lately without all the structure and worry -- and it's cheaper too! So, from now on I'll probably only post things I make over and over again so I have a sort of on-line cookbook of my favorite stuff that I can share with you -- or things that I've discovered that are ah-maz-ing and worthy of being photographed and posted.

Like this cupcake:

It's a sweet and salty cupcake from Jones Brothers Cupcakes here in Omaha, aka, the best cupcake I've ever stuffed into my face. Seriously. It's a moist French chocolate cake with salted caramel in it, piled high with thick chocolate buttercream and a drizzle of an ever-so-slightly salty caramel. The balance of sweet with a hint of salt is just right. Just. Right.

Super Bowl Snack Mix | Her View From Home

No matter who is playing in the Super Bowl, there’s always one thing to look forward to: the food. The Super Bowl is the perfect time to whip up all those little appetizer-type, one-bite foods, dips, and treats. This year, be sure to add this snack mix to your round-up. It basically contains every good thing from the chip and cracker aisle plus a nice spicy kick.

The recipe is slightly adapted from none other than our local grocery store’s healthy living publication. Hooray for Hy-Vee and its free magazine!
