Happy 2013, everyone! I know it has been quiet on here for several weeks. With the holidays, traveling, busy time at work and other things, I haven’t had a lot of spare time or discipline to keep up with posting around here. As an apology, I’d like to offer you --
-- yet another quinoa recipe.
I love quinoa. I love quinoa so much that my husband told me I’m making him sick of it. Thus, I was forced to stop making it for a bit so he wouldn’t grow to hate it due to overconsumption. But, really, if you have to overeat anything, isn’t a superfood the way to go?
My husband also let me know that he likes quinoa best made this way: baked with lots-o-cheese. It’s similar to Quinoa “Mac & Cheese” (a must-try if you haven’t already!). Since they bake into handy little “cups”, they’re easy to transport or share, and you can even eat them cold (but they’re better warm). Plus, the recipe makes a ton so you’ll have plenty for your family, or leftovers for yourself!
